Cinnamon Apple Toffee Crunch Ice Cream Cake

Even though the crisp fall temps are starting to creep in and bring on thoughts of warm spiced dishes, who says we can’t enjoy ice cream for a little while longer? After all, fall has JUST barely arrived, so this is a perfect crossover dessert.  And of course, because it is apple season, this cake is right on time.  Ice cream cakes are also a great make-ahead dessert, or just kept in the freezer for when company drops by or there’s an emergency sugar craving! Just wrap it well in a few layers of foil until you’re ready to go.  This one made its debut at a BBQ this week, where we enjoyed some of the last few warm days of late summer weather.  I hope you enjoy it too.  Read the rest of this entry

Irish Apple Cake with Caramel Whiskey Glaze

When it comes to St. Patrick’s Day fare, I lean more towards Irish dishes and ingredients more so than all things green, although those are good too!  So for this dessert, I took my inspiration from Irish apple cakes and took it up a notch with a little Irish Whisky (Bushmills, to be exact) both in the cake, as well as part of the glaze.  You could always serve this with a scoop of rich vanilla ice cream or even a bit of custard, but I think it is just as delicious on its own.  I hope you enjoy this recipe. Grilled Apple Spinach Salad with Maple Mustard Vinaigrette

During a recent visit to Masstown Market, I picked up some local valley apples (Braeburn and Vistabella), as well as some double gloucester poppy seed cheese from Knoydart Farms.  The Braeburn variety made its way into a coleslaw that I paired in a sandwich with chipotle maple scallops.  But having had a grilled peach salad recently at the Saint John Alehouse, I wanted to try something similar with the Vistabella apples and the abundance of spinach I get in my CSA.  Paired with the double gloucester cheese, some toasted pecans and the maple mustard vinaigrette, this turned into one of the best salads ever, if I say so myself !  Read the rest of this entry
