While not a true fudge in the sense that you don’t boil it, this recipe was quick and easy to whip up. I even used a disposable tinfoil pan to make the process even easier. Chopping apricots is always a bit difficult, but a pair of kitchen scissors can make quick work of that. Convinced yet? Bottom line, these little morsels are TASTY !
- 9 ounces white chocolate
- 5 tbsp butter
- 1/3 cup water
- 1 package of vanilla instant pudding
- 3 cups icing sugar
- 1 cup of chopped dried apricots
Prepare a square pan by lining with tinfoil, or as I said, use a disposable. In microwave, melt white chocolate and butter together at one minute intervals until melted (it won’t take long). Whisk in water, then instant pudding mix. Add icing sugar one cup at a time, whisking in between. If it is lumpy, you can always make a few passes through with the stick blender to make it more creamy. Stir in chopped apricots, then pour into prepared pan, pressing to distribute. Refrigerate for several hours or overnight before removing from pan and cutting into pieces. Store in fridge.
