Dark Chocolate Ginger Cookies


I have been cooking and stocking the freezer this weekend and wanted a little sweet something to finish off.  These are another spin on a traditional chocolate chip cookie, using 70% cocoa chocolate chunk and chopped candied ginger.  Chocolate covered ginger is a nice treat in and of itself and this is my way of bringing that flavor to a cookie.  I thought the result was pretty tasty ! 

The recipe:

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1/2 tsp vanilla
  • 2 cups coarsely chopped dark chocolate (I used a combo of Just Us brand along with Camino and some Lindt I had)
  • 1/2 cup chopped candied ginger

Preheat oven to 350 degrees.  Combine flour, baking soda and salt in a bowl, set aside.  In a stand mixer cream together butter and sugars until incorporated.  Add eggs one at a time, then vanilla.  Slowly add dry ingredients in two or three additions until fully mixed.  Lastly, mix in chocolate and ginger.

Use a small ice cream scoop to portion out dough onto parchment lined cookie sheets.  Bake for 7-8 minutes or until turning golden.  Allow to cool on rack.  Recipe makes about 34 cookies, depending on size.

  1. Yum! I love candied ginger and imagine that it’s awesome in chocolate chip cookies. If you’ve got some left over, I highly recommend these lemon ginger cookies!
