This is a super easy small batch recipe that my mother gave me years ago. No idea where it originally came from but it is a great little recipe. I have even made several batches in the same pan in order to get up to quantities for gift baskets and such at Christmas.
This particular batch is destined to become part of a cake in the next few days, that in turn will be brought to a fundraiser.
Here’s the recipe:
- 1 cup white sugar
- 1/4 cup light corn syrup
- 1 cup salted peanuts
- 1 tsp butter
- 1 tsp vanilla
- 1 tsp baking soda
Stir together sugar and syrup in a microwave safe bowl (I use glass). Microwave on high for 4 minutes.
Stir in peanuts and microwave for another 3-5 minutes until light brown. Add butter and vanilla and microwave for an additional 1-2 minutes.
Add baking soda and stir. Quickly spread this mixture onto a greased baking sheet. Allow to cool and break into pieces.
